What is Cacao tree?
Cacao is a humid-tropical tree whose seeds are processed to make chocolate.
Structure and life cycle
Flowers and pods: Tiny flowers grow on the trunk and major branches, where the large pods may develop. Seeds inside a pod are surrounded by sweetish white pulp. Small insects assist pollination, and only a fraction of flowers become fruit.
Growth, uses and cautions
Growth and processing: Cacao is sensitive to heat, humidity, shade and water balance. Fermenting and drying harvested seeds help develop flavor before roasting and other processing. Raw cacao fruit is not the same as a chocolate bar, whose sugar and added fat vary by product.
