Which trees produce cinnamon?
True cinnamon is produced by drying the inner bark of young stems of the laurel-family tree Cinnamomum verum.
Structure, development and life cycle
After outer bark is removed, thin inner layers curl into quills as they dry. Thicker bark from Cinnamomum cassia and related species is also sold as cinnamon. Species can differ in flavor, structure and compounds such as coumarin. Leaves and fruits are separate organs; bark is the main spice source.
Growing, uses and cautions
A wet tropical climate and drained soil support young stems. Harvest systems may coppice plants so new shoots repeatedly grow from the base. Normal spice use differs from high-dose supplementation, where species and health status matter. Scientific naming helps identify the product accurately.
