Why are stevia leaves sweet?

Added: 27 October 2026

Stevia is a South American plant that accumulates intensely sweet steviol glycosides in its leaves.

Structure, development and life cycle

The sweet compounds arise from leaf metabolism and vary with cultivar, growth stage and conditions. The plant belongs to the daisy family and bears small white flowers. Leaf yield and composition may change after flowering begins. Fresh leaves, dried powder and purified sweeteners are different products.

Growing, uses and cautions

Warm sunny conditions, even moisture and good drainage are needed; cold sensitivity means it may be grown as an annual or container plant. Pinching promotes branching. Because seed germination can be uneven, cuttings are an option. Approved food extracts and concentrated homemade products do not have the same purity or dose control.
